Potato and Bacon Croquettes

Potatoes are really versatile to serve as an entrée or side dish; you can make potato wedges, French fries, filled baked potatoes, mashed potatoes and of course, potato croquettes!

Feel free to personalize this recipe adding any other ingredient that you would like. For example, these croquettes are really good if you add some: Parmesan cheese, chopped ciboulette, bell peppers, mushrooms, ham…

Ingredients:

  • 3 cups of mashed potatoes
  • ½ cup of crispy bacon chunks
  • ¼ cup of parsley and cilantro, chopped
  • ¼ cup of shredded cheese
  • 2 eggs
  • 1 cup of all-purpose flour
  • 1 ½ cups of bread crumbs
  • Salt to taste
  • Pepper to taste
  • Oil to fry

 

Instructions:

  1. In a large bowl, combine the mashed potatoes, crispy bacon, parsley, cilantro and cheese. Give it a good stir to mix.
  2. Add in the salt and pepper, stir again really well.
  3. Put the mixture in the refrigerator for at least 20 minutes so it will be easier to make balls with it.
  4. Make balls of around 2 tbsp of potato mixture and place them in a tray. When finished, let them set in the refrigerator again for another 10 – 15 minutes. All the chilling steps can be avoided but those really help the croquettes to keep the round shape while frying.
  5. Prepare three bowls, one with plain flour, one with the eggs, whisked and the third one with bread crumbs.
  6. Take each croquette and dip it into the flour, the into the eggs and finally into the bread crumbs. If you want the outside to be thicker follow this pattern: flour, egg, breadcrumbs, egg, breadcrumbs.
  7. Fill a deep pan with some oil and when hot start to fry your croquettes until golden.
  8. When ready, let them cool down for a bit and enjoy!
