One Pot Chicken Recipe

Prepare a whole lunch with some basic ingredients in less than half an hour. Some people say they want to eat better but don’t have enough time to make healthy lunches. Well, with this recipe you will be able to make a healthy and enjoyable dish when in a hurry!
Recreate this recipe using different vegetable combinations, that way it will feel like a totally different recipe every time! Some great veggies to use for this recipe are: bell peppers (any color you like), potatoes, onions, squash, corn, sweet potatoes, or any other you like.
If you want to add a side dish to this meal and keep the healthy vibe, some nice options are: a green salad, carrot salad, mashed cauliflower, quinoa, brown rice, etc
Preparation time: 20 minutes
Yields: 4 portions
Ingredients:
- 500 g of chicken breast, cubed
- 2 medium zucchinis
- 2 medium carrots
- 1 tbsp of Worcestershire sauce
- 2 tbsp of olive oil
- A pinch of salt
- Pepper to taste
Method:
- In a large pot, over medium heat, add the olive oil and wait around 2 minutes before adding the remaining ingredients.
- Incorporate the cubes of chicken and move them a bit so all the pieces will be completely covered in a bit of oil.
- Add the Worcestershire sauce, salt and pepper into the pot. Stir really well and let it cook for 5 minutes. If you want to spice things up a little bit, pour some of your favorite hot sauce.
- Cut big chunks of carrots and zucchinis. If you prefer small pieces or veggie strips that will work too.
- When the chicken is almost ready, add in the vegetables, give it another good stir and close the pot with the lid.
- When ready, serve with your favorite side dishes!
