Pasta Salad Recipe

This recipe is perfect for those days when you want to eat something delicious but don’t want to spend a lot of time in the kitchen. Also, it is great to make for a large group of people, just double the ingredients.
Personalize this yummy dish with some easy small changes like adding crispy bacon or some square pieces of your favorite cheese. This recipe works great with tuna instead of chicken too, so keep it in mind and make sure to try both versions!
This chicken pasta salad is fantastic to meal prep and bring to your work or school because you don’t need to heat it before enjoying it.
Preparation time: 30 minutes
Yields: 4 portions
Ingredients:
- 500 gr of pasta, your favorite kind
- 1 chicken breast, shredded or cubed
- 150 gr of sweet corn
- 150 gr of green peas
- 2 carrots
- 1 cup of mayo
- ¼ cup of mustard
- 1 tbsp of white vinegar
- 1 tsp of sugar
- Pepper to taste
- Salt to taste
Method:
- In a large pot, over medium heat, boil your pasta until al dente. These ones are the best for this recipe: girandole, penne, rigatoni, farfalle or ditanili.
- In a separate pot, boil your chicken breast and the carrots. When ready set aside to cool down.
- Cut your carrots in small pieces. Tiny squares or triangles work really good. If you prefer big chunks that is fine too.
- Take a large bowl and mix your pasta, shredded chicken breast, small pieces of carrot, sweet corn and green peas. Stir to combine really well.
- To make the dressing: combine the mayo, mustard, white vinegar, sugar, ground pepper and salt. If you want it to be a bit spicy, add some red pepper.
- Pour the dressing all over the pasta salad. Give it a good stir and it is ready to serve!
