Ham & Eggs Potato Salad

Sometimes you just want to make something simple yet delicious to enjoy with friends or family and this recipe is a classic go to for any occasion!
A tasteful ham and potato salad is never a bad idea, it is easy to make, you don’t need many ingredients, most children and adults will love it and you can get creative with it to give it your own style. If you want to add some more ingredients to this salad, try some: bacon, shredded cheese, nuts, different kind of onions or even different kind of potatoes to get a rustic vibe.
Ingredients:
- 6 cups of potatoes, cubed
- 3 hard-boiled eggs, peeled and chopped
- 2 cups of ham, diced
- 2 cups of mayo
- ½ cup of mustard
- ¼ cup of honey mustard
- Salt to taste
- Pepper to taste
Instructions:
- In a large bowl, combine your cubed potatoes, chopped hard boiled eggs and diced ham. Give it a little stir and set aside.
- In a separate bowl, combine the mayo, mustard, honey mustard, salt and pepper. If you want your salad to be a bit spicy, add some red pepper flakes. Mix well to get the perfect potato salad dressing.
- Pour the dressing over your salad and gently fold it over. Make sure that all the ingredients are well covered in dressing. This salad needs to be really creamy!
- When finished you have two options. Serve it right away (and it will be delicious), or to put it in the refrigerator to chill overnight; the second option is my favorite because leaving it there overnight gives a lot of extra flavor to this salad, the potato kind of absorbs the dressing. Totally recommend to make it ahead to have enough time to let it chill.
