Baked Fish Recipe

Ingredients:
For Vegetables:
- 2 large potatoes cut into thin wedges
 - 3 tomatoes cut into wedges
 - 2 small onions cut into quarters
 - 7-8 cloves of garlic
 - 2 tbsp olive oil
 - Salt and white pepper to taste
 - 1 tbsp Italian herbs or any mixed herbs
 - 1/2 tbsp cumin seeds
 
For Fish:
- 5-6 boneless fish fillets. (Any white fish) Prefer white salmon
 - 4-5 cloves of garlic crushed with salt and white pepper to taste
 - 1 tsp Italian herbs
 - 2 lemons juice
 
Method
- Mix the garlic, italian herbs and lemon juice. Pour marinade over the fish fillets and keep aside for an hour.
 - Preheat oven to 375°F, Toss all the ingredients mentioned for vegetables together and spread in a baking tray.
 - Bake for about 35-40 mins till the potatoes are tender.
 - You might need to toss around all the vegetables every 10 mins.
 
- place the marinade fish fillets carefully over the bed of vegetables so that it doesn’t stick to the bottom , cook for a further 15 mins and it’s ready
