Pasta Primavera Recipe

Ingredients:
- 1 chicken breast cut into really small cubes
- 1 green bell pepper cut into small chunks
- 8 oz sweet corn strained
- 5-6 mushrooms chopped ( not finely)
- 4-5 tbsp black olives sliced
- 2 oz cheddar cheese grated
- 4 oz mozzarella cheese grated
- 8 oz elbow macaroni
For sauce:
- 2 tbsp oil
- 2 tbsp butter
- 2 tbsp garlic paste
- 2 tbsp heaped Wheat flour
- 2 cup milk plus stock if the sauce seems too thick
- 1/2 tsp white pepper
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 small block cheddar cheese
- 1 chicken cube
- Salt to taste
Method
- Sauté chicken in a bit of olive oil and 1 tsp garlic paste till tender and water dries. Put aside.
- Boil macaroni according to packet instructions and set aside.
- For sauce, heat oil and butter , add garlic and sauté for a while add in wheat flour a little at a time and mix well using a whisk such that no lumps form.
- Add in milk and whisk till it starts to thicken, add in all the seasonings and cheese. Cook till cheese melts. Consistency should be such that it coats the back of a steel spoon. Add in the vegetables, chicken and macaroni.
- Pour in a baking dish and top with grated cheese , sprinkle paprika powder and oregano and bake in a preheated oven 350 degrees F for 10 mins and then under the broiler for additional 10 until the top is nicely melted and golden.
