Ricotta Crepes Recipe

Crepes are so easy and versatile that I guarantee you will find a hundred ways to add them in your meals!
These crepes are perfect for when wanting a filling breakfast, but remember, they can be savory or sweet, use your creativity and start cooking delicious crepes!
Ingredients:
For the crepes:
- 1 cup of all purpose flour
- 1 cup of milk
- 3 eggs
- 3 tbsp of butter, melted
- 1 tbsp of sugar
- A pinch of salt
For the filling:
- 2 cups of ricotta cheese
- 1 cup of shredded ham, lean
- ¼ cup of chives, chopped
- ½ cup of cream
- A pinch of salt
- Pepper to taste
Instructions:
- In a large bowl, combine the milk, eggs and melted butter. Stir well.
- Add the sugar, salt and all purpose flour into the bowl. Don’t forget to sift the flour before mixing it to avoid big lumps in the batter.
- Whisk until completely integrated and set aside.
- Place a nonstick skillet over medium heat and wait until hot.
- Pour about 4 – 5 tbsp of crepe batter and swirl to cover the skillet bottom.
- Cook for 2 minutes and flip it to cook the other side for another minute. Be careful not to let them over the heat for too long, crepes are truly thin so they cook incredibly fast.
- Repeat the same with all the batter and set aside when ready.
- Take a new bowl and mix the ricotta cheese, shredded ham, chopped chives, salt and pepper to taste.
- Mix well and chill for 20 minutes to set.
- Fill each crepe 2 – 3 tbsp of the ricotta cheese filling.
- Roll the crepes and place them back in the skillet.
- Heat the filled crepes over medium heat. Before serving pour some cream over them and add extra chopped chives on top.
