Serve them with your favorite sauces or dips as a snack or as a side dish with some protein and veggies.
Ingredients:
- 2 large potatoes, peeled
- 2 tbsp of salt
- Pepper to taste
- Oil to fry
Instructions
- Using a mandolin or a really sharp knife, carefully slice the potatoes as thin as possible. The thinner the crispier!
- Place the potato chips in a large bowl and cover them in really cold water. Leave them there at least an hour but preferably overnight. This step is so important because it will help the chips to be crisp when cooked.
- Remove the potatoes from the cold water and place them in a paper towel. The towel will absorb all the water to have them ready to be cooked.
- In a large skillet, over medium heat, add the oil and wait until hot.
- Add the chips about 5 – 7 at a time. If you try to cook more than that the oil will lose the temperature and they won’t cook as fast which means they will absorb more oil.
- Cook for about 2 minutes, flip them and cook for 1 minute more.
- Place the potato chips in a paper towel to remove the oil excess and immediately sprinkle them with salt to taste.
- Repeat the same process until all are done! You can store these chips in glass jars to keep their texture.
