Quince Jelly Cookies

These rich cookies are perfect to bake something different than the classic, yet delicious, chocolate chip ones. Try these with different jelly flavor to surprise your friends!

Ingredients:

  • ½ cup of butter, room temperature
  • ¾ cup of sugar
  • 2 ½ cups of all purpose flour
  • ¼ cup of cornstarch
  • 2 eggs
  • 1 tsp of vanilla
  • 1 tsp of baking powder
  • A pinch of salt
  • 1 cup of quince jelly (you may substitute with another flavor jelly)

 

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, cream together the room temperature butter, sugar and salt. Whisk until the butter is light and fluffy; feel free to do it by hand or with an electric mixer.
  3. Add the eggs and vanilla. Keep whisking to combine well.
  4. Sift into the bowl the all purpose flour, cornstarch and baking powder. Stir to combine until getting a firm cookie dough. Make sure to sift the dry ingredients to avoid large lumps in the mixture.
  5. Sprinkle some flour over a plain surface and knead the dough for about 2 minutes.
  6. Divide the dough in about 30. This will depend on how big or small you want your cookies to be. Because these will have the jelly in the center, it is better to make them medium to large.
  7. When divided, roll the dough in a ball and place them in a previously lined baking sheet. Press them down a bit to flat the cookies.
  8. Using the back of a tea spoon or even your fingers, create a small dent in the center of each cookie and add some quince jelly. Repeat until the tray is full. Don’t forget to leave some space between each cookie to let them expand in the oven.
  9. Bake the cookies for 20 minutes or until golden.
  10. Let them cool down before serving and enjoy!!
