Homemade Chipá Recipe

What is Chipá? This is a Brazilian cheese bread that is so incredible you won’t want any other cheese biscuit from now on…
Feel free to experiment with different kind of cheeses if you want to personalize them! Also, adding some other spices to the dough like basil or chilli pepper can totally transform your chipás!
Ingredients:
- 1 cup of tapioca flour
- 3/4 cup of Parmessan cheese, shredded
- 1 egg, large
- 1/2 cup of milk
- 1/4 cup of vegetable oil
- Salt to taste
Instructions:
- Preheat the oven to 180 degrees C.
- In a pot, over medium heat, add the milk and vegetable oil. Stir occasionally with a wooden spoon until starting to boil. Don’t let it boil completely, you just need it really hot.
- Remove the pot from the heat and sift in the tapioca flour and salt. Stir to combine with the same wooden spoon.
- When completely combined, start to whisk the dough with an electric mixer to cool it down.
- After about 2 minutes of whisking, add the egg and keep whisking to incorporate it. You need to cool down the dough first or the egg could be cooked with the heat of the dough.
- Finally, add the Parmessan cheese! If you don’t have a dough hook for you electric mixer, then start to knead the dough for about 10 to 15 minutes and make sure to distribute the cheese evenly so each piece of chipa is full of cheese.
- Create balls of dough as big as you want them. Usually the chipás are about 2 tbsp size.
- In a large baking sheet, previously lined, place the chipás leaving some space in between them to let them grow a bit in the oven.
- Bake for 20 to 25 minutes or until golden.
- Serve warm!
