Caribbean Stewed Chicken

A vibrant chicken dish that is tender and full of flavor. The gravy that comes with the dish will tempt you to go for more!

Ingredients
2 pounds chicken drumettes
1/2 teaspoon black pepper
4 scallions (chopped)
½ cup parsley (chopped)
½ cup cilantro (chopped)
1 teaspoon minced garlic
1 ¼ teaspoon dried thyme
1 tbsp. butter
1/2 teaspoon salt
1 onion (chopped)
2 tablespoons brown sugar
Directions:
- In a large bowl, mix black pepper, parsley, cilantro, minced garlic, scallions, dried thyme, salt, and onions. Marinate the chicken drumettes into the seasoned mixture. Leave in the fridge overnight or just for 1 hour.
- Heat up a large saucepan on medium-high heat. Add butter and let it melt before adding the brown sugar. Let the sugar melt completely and turn into a slightly darker brown color, but do not let it burn.
- Add in the marinated chicken and stir into the melted sugar until all the pieces are coated. Allow the chicken drumettes to cook for 15 minutes. Stir the pot every 5 minutes to prevent the chicken from sticking to the bottom of the pan.
- Add water until it completely covers the chicken drumettes. Stir again.
- Reduce the heat to low and cover the pot to let the chicken cook for about 40-50 minutes. Check for salt and soup consistency of the sauce.
