Easy Avocado and Egg Sandwich Recipe

Ingredients:
• 2 slices of whole grain bread
• ¼ cup of avocado, mashed
• 3 eggs
• ½ tbsp of olive oil
• 1 tbsp of freshly ground black pepper
• Salt to taste
Directions:
- In a hot pan, add olive oil.
- Add egg to the hot olive oil.
- Add salt and black pepper to the egg mixture.
- Give a thorough mix and turn off the heat.
- In another bowl, add avocado, salt and pepper.
- Mix them thoroughly and keep aside.
- Spread the avocado mixture on whole grain bread slices.
- Add scrambled egg on top and serve.
