Cajun Chicken Gumbo Recipe

This delicious American Cajun chicken gumbo is made with chicken breasts, turkey ham, chicken stock, vegetables, and Cajun spice mix.

Serves: 6
Preparation time: 20 minutes
Cooking time: 45 minutes

Ingredients:

  • 5 Skinless chicken breast, cut into chunky pieces
  • 300g, Thickly sliced turkey ham, trimmed off any fat and diced
  • 600ml, Chicken stock
  • 1 Onion, chopped
  • 2 Celery sticks, sliced
  • 2 Green peppers deseeded and cut into chunks
  • 2 Tbs Parsley, roughly chopped
  • 3 Spring onion, sliced
  • 4 Tsp Cajun spice mix
  • 5 Tbs Plain flour
  • 3 Bay leaves
  • 4 Tbs Olive oil

Directions:

  • In a large frying pan, heat 1 tablespoon of olive oil over medium heat.
  • Add in chicken pieces and fry for 5 minutes or until browned.
  • Transfer cooked chicken onto a plate.
  • Add 1 more tablespoon of oil into the frying pan and add onion in it.
  • Cook for 5 minutes or until almost softened.
  • Add in celery and fry for 2 more minutes.
  • Transfer the cooked onion and celery to the chicken plate along with chicken pieces.
  • Add the remaining 2 tablespoons of oil to the frying pan and add bay leaves and flour in it.
  • Cook for 2 to 3minutes or until golden brown, stirring constantly.
  • Stir in the Cajun spice mix and cook for 2 more minutes.
  • While whisking with a hand mixer pour in stock and mix until smooth and saucy.
  • Return the chicken, onion, and celery to the stock mixture along with the peppers.
  • Cover, and simmer for 15 minutes.
  • Add in turkey ham, cover, and simmer for additional 10 minutes, stirring occasionally.
  • Taste and adjust the seasonings, garnish with parsley and onion and serve.
