Cornbread Taco Casserole

This delicious cornbread casserole is packed with tempting seasonings along with the attractive
topping of cheese and onion.


Serves: 6

Preparation time: 20 minutes
Cooking time: 25 minutes


Ingredients:
1. 1 (8 ½ ounces) package cornbread/muffin mix
2. 1 envelop taco seasonings
3. 1 ½ pounds ground beef
4. 1 (15 ¼ ounces) can of whole kernel corn, drained
5. 1 (8 ounces) can tomato sauce
6. 1 (2.8 ounces) can French-fried onions, divided
7. ½ cup chopped green peppers
8. ½ cup of water
9. 1/3 cup of shredded cheddar cheese


Directions:
1. Cook beef in a large skillet over medium heat until no longer pink, drain.
2. Stir in taco seasonings, corn, tomato sauce, green peppers, and water.
3. Transfer into a 2-qt baking dish set aside.
4. Prepare cornbread mix according to package direction and mix in half of the onion and
spread this mixture over beef mixture.
5. Bake at 400 degrees F for 20 minutes, uncovered.
6. Lastly sprinkle with remaining onion and cheese, bake for another 3 to 5minutes or until
cheese is melted and a toothpick inserted into cornbread layer comes out clean.
