Tempting Winter Salad

This colorful salad is made up of greens, fruits, cheese, and walnut, tossed with a zesty and
light dressing.
Serves: 8

Ingredients:
1. 4 tablespoons of apple cider vinegar
2. 2 tablespoons plain fat-free Greek yogurt
3. 1 tablespoon sugar-free strawberry preserve
4. 2 teaspoons of honey
5. 1 ½ teaspoon olive oil
6. 1 teaspoon Dijon-style mustard
7. ¼ teaspoon kosher salt
8. 1/8 teaspoon black pepper
9. 1 garlic clove, minced
10. 3 cups torn romaine lettuce
11. 3 cups fresh baby spinach
12. 1 small cooking apple, thinly sliced
13. ½ cup pomegranate seeds
14. ½ cup crumbled feta cheese (or blue or goat cheese)
15 ¼ cup chopped walnuts, toasted
Directions:
1. Combine apple cider vinegar, yogurt, preserve, honey, olive oil, mustard, salt, pepper,
and garlic in a small bowl and whisk until well combined.
2. Combine romaine lettuce, spinach, apple, pomegranate seeds, cheese, and walnuts in
an extra-large mixing bowl.
3. Drizzle the vinegar mixture, toss to coat, and serve.
