Potatoes Carrot and Chicken Stew

This tempting stew is a great combination of vegetables, chicken, ketchup, and thyme.
Serves: 6
Preparation time: 15 minutes
Cooking time: 25 minutes
Ingredients:
1. 2 medium potatoes, peeled and cut into ¾ inch cubes
2. 3 medium carrots, cut into ¼ inch slices
3. 1 medium onion sliced
4. 3 celery ribs
5. 1 ½ pound boneless, skinless chicken breast, cut into 1-inch pieces
6. 1 cup chicken broth
7. 1/3 cup all-purpose flour
8. 3 tablespoons butter
9. 1 tablespoon ketchup
10. 1 tablespoon cornstarch
11. ½ teaspoon dried thyme
12. ½ teaspoon salt
13. 1 dash pepper
Directions:
1. Combine flour, salt, and pepper in a large shallow dish, add in chicken and turn to coat,
(a few pieces at a time).
2. Melt butter in a large skillet over medium heat and cook in chicken until juices clear.
3. Add in celery and onion and cook for 3 more minutes.
4. Add in potatoes and carrots.
5. Combine the broth, ketchup, cornstarch, and thyme in a bowl and mix well.
6. Stir broth mixture into skillet and bring it to boil.
7. Reduce heat to medium-low, cover, and simmer for 20 minutes or until the vegetables
are tender.
