Ricotta Orange Pancakes

These pancakes are delicious and easy to make. You can replace orange juice with lemon
juice.


Serves: 12
Preparation time: 10 minutes
Cooking time: 30 minutes


Ingredients:
1. 1 large egg
2. 1 ½ cups all-purpose flour
3. 1 cup part-skim ricotta cheese
4. 3 tablespoons sugar
5. 1 ½ teaspoons baking powder
6. ½ teaspoon baking soda
7. ¼ teaspoon salt
8. ¾ cup 2%milk
9. ½ cup orange juice
10. ¼ cup butter
11. ½ teaspoon alcohol-free vanilla extract
12. ½ teaspoon grated orange zest
13. Maple syrup for serving (optional)


Directions:
1. Combine flour, sugar, baking powder, baking soda, and salt in a bowl.
2. Whisk together egg, cheese, milk, orange juice, melted butter, vanilla, and orange zest in
another bowl until blended.
3. Add the egg mixture to the flour mixture and mix until just moistened.
4. Lightly grease a griddle with butter and heat over medium heat.
5. Pour ¼ cupfuls batter onto griddle and cook for 3 minutes or until bubbly on top begin to
pop and bottom are golden brown.
6. Flip and cook for 2 minutes or until the second side is golden brown.
7. Serve with maple syrup.
