Grilled Eggplant Sandwiches

These tempting sandwiches are made with grilled eggplant, cheese, onion, and tomato slices.
Serves: 4
Preparation time: 10 minutes
Cooking time: 8 minutes
Ingredients:
1. ½ pound Japanese eggplant, cut into ½ inch planks
2. 1 garlic clove, minced
3. ¼ cup vegetable oil, plus extra for brushing
4. ½ teaspoon kosher salt
5. Freshly cracked black pepper, to taste
6. 6 ounces aged cheddar, sliced
7. Thinly sliced onion and tomatoes (optional condiments)
8. 8 slices bread
Directions:
1. Mix together garlic, oil, salt, and pepper in a large bowl and toss the eggplant in it.
2. Then heat the grill until hot, brush the hot grill with oil and place the eggplant directly on
the grill.
3. Grill both sides of the eggplant for 3 to 5 minutes.
4. Season with more salt and pepper if needed.
5. Brush the outer sides of bread with oil.
6. Assemble the sandwiches with the grilled eggplant, cheese, onion, and tomato slices.
7. Place the prepared sandwiches on the grill weighted down with the grill weights.
8. Grill each side until golden.
