Cheesy Twice Baked Potatoes

These baked potatoes are very easy to make, you can add these cheesy creamy goodness in
your list of snacks or side dishes.
Serves: 16
Preparation time: 30 minutes
Cooking time: 1 hour 10 minutes
Ingredients:
1. 8 medium-sized baking potatoes
2. 8 thick-cut prepared turkey bacon slices, cooked and crumbled
3. 1 cup sour cream
4. ½ cup butter, cut into slices
5. ½ cup milk
6. 2 cups grated cheddar cheese
7. 2 green onion sliced
8. ½ teaspoon seasoned salt
9. ½ teaspoon pepper
10. Canola oil
Directions:
1. Preheat your oven to 400 degrees F.
2. Rub potatoes with oil and place on a baking sheet.
3. Bake for 50 minutes or until potatoes are tender and skin are crisp.
4. While the potatoes are baking, stir together bacon, sour cream, butter, milk, salt, and
pepper in a large bowl.
5. Remove potatoes from the oven and let them cool for 15 minutes.
6. Reduce your oven temperature to 300 degrees F.
7. Cut warm potatoes in half lengthwise.
8. Carefully scoop out the pulp from the potatoes into the bowl with butter mixture, leaving
the shell intact.
9. Mash pulp and butter mixture together with a potato masher.
10. Mix in 1 cup cheese, green onion, additional salt, and pepper if required.
11. Spoon potato mixture into potato shells, place on a baking sheet.
12. Sprinkle with the remaining 1 cup cheddar cheese.
13. Bake for 15 to 20 minutes or until cheese is melted and potatoes are thoroughly heated.
